Curry Ginger Zucchini Bread

Zucchini bread takes its inspiration from Turkey, with bold flavors of crystalized ginger and curry.

Lemon zest

Crystallized ginger, chopped

Poppy Seeds

2/3 cup
Yellow curry powder
1 oz
1/4 cup
Almonds, slivered, lightly toasted

Batter
  1. Wash zucchini and grate into a colander; drain for 30 minutes then squeeze with a towel to remove any excess moisture.
  2. Combine water, lemon zest and chopped ginger in a medium stainless steel mixing bowl.
  3. Stir with wire whisk until well blended (if ginger sticks together, use a gloved hand to break apart).
  4. Combine in a separate large mixing bowl, the muffin mix, poppy seeds and curry powder.
  5. Blend dry ingredients together until well-mixed.
  6. Add liquids to the muffin mix. Mix using a rubber spatula until batter is wet, about 30 seconds.
  7. Fold in zucchini and almonds until incorporated.
  8. Deposit approx. 1 lb 8 oz (3 cups) of batter into each of 7 greased (9x4 1/2 x 2 3/4) loaf pans.
  9. Bake as directed below; allow to cool for 30 minutes in pan then remove and cool completely.
