Prep
  1. Thaw pot pie dough, covered, at room temp. 15-30 minutes until flexible or refrigerate overnight.
  2. Microwave frozen vegetables for 3 minutes; keep warm for filling.
Filling
  1. Melt butter in medium sauté pan; add onions and cook until translucent.
  2. Add ground beef, cooking until browned, then add beef broth, salt and pepper.
  3. Cook 3-5 minutes until mixture is hot and liquid is absorbed; add vegetables and stir to combine.
Assembly
  1. Press pot pie crust, sticky side up, into bottom and up sides of 12 greased jumbo muffin cups.
  2. Fill with 2 oz beef mixture; top with approx. 4 oz mashed potatoes and 1 1/3 Tbsp cheddar cheese.
  3. Bake as directed below until crust is golden brown and top is lightly browned; cool 10 minutes before serving warm.
